Pulque is an alcoholic beverage made from the fermented sap of the maguey (agave) plant.

In the pre-Hispanic Mexica culture, this ancient drink was an essential part of exclusive religious rituals and festivities. After the arrival of the Spanish conquistadores, its numerous health benefits, such as high content of carbohydrates, proteins, and vitamins, turned pulque into an important food supplement for the masses.

Nowadays, the popularity of this traditional drink has fallen behind mezcal and tequila, but pulque still remains a staple in Mexican culture.
