La fanesca is a traditional Ecuadorian stew that is only eaten during Semana Santa (Holy Week), and it consist of twelve types of beans (that represent the twelve apostles) and grains, such as lentils, peas, and corn, and cod as the representation of Christ.
This dish is the perfect representation of the religious syncretizing of the Hispanic culture and dates back to pre-Hispanic times where it was prepared to celebrate the March equinox which symbolizes the beginning of a new life cycle for the indigenous people.
After the Spanish colonizers arrived, they combined this popular tradition with the celebration of Holy Week and Easter.
